Also, I made the mistake of looking at the submitted version and saw that the CV pages got shambled a little, so just don't look at the documents after submitting.

I agree the template information is ambiguous. I'd just set your word processor margins to 15mm all around and let it deal with the headers and footers on the standard setting.
